A forest cash crop grown under the canopy of the Hoàng Liên range, where most upland households have a plot. It flowers in early summer; the red pods are picked in autumn and dried over a slow wood fire.

Chayote (su su), cabbage and cauliflower do well in Sa Pa's cool air — grown for the lowland markets in summer when the plains are too hot, and again as a winter crop planted as the rains ease.

Cymbidium orchids (địa lan) and other cool-climate flowers are a Sa Pa speciality — Tả Phìn is the orchid centre — grown to reach the markets for Tết, the Lunar New Year.

Where the water comes from
Sa Pa's terraces are fed by streams and hand-dug canals (mương) led down from the forest above. Whose field takes water on which day is arranged between neighbours, not set by a published timetable — so this shows the season, never a schedule.
These are the usual months on Sa Pa's highland fields: one rice crop a year on the terraces, black cardamom under the forest, and cold-season vegetables and flowers in between. Frost, fog and the monsoon move the dates from year to year, and the higher hamlets always run later than the town. Ask locally before you count on a particular week.
